Flourless Banana Pancakes {Gluten Free, Paleo}

Banana pancakes

These banana pancakes are ridiculously quick and easy to make.  You don’t need to measure out any flour or any other ingredients for that matter.  These pancakes are naturally sweet and don’t need any maple syrup, but you can always add maple syrup if your heart desires.  These pancakes are dense, if you like your pancakes thinner just add another egg to the mixture.  You can also tailor the pancakes to your family’s liking by adding chocolate chips, shaved coconut, nuts, other chopped dried or fresh fruit {mixed in with the batter or piled on top of the pancakes}, or top with homemade whipped cream.

Somebody was eager to dig into his chocolate chip banana pancakes.

My munchkin LOVES these pancakes, even more so than regular pancakes made with refined white flour or whole wheat that we indulged in while traveling.  He took 2-3 bites of the regular pancakes, then pushed them aside and moved on to mommy and daddy’s plates.  Like my son, I actually prefer these clean banana pancakes over regular pancakes.

Nourishing Ingredients {why I feel good feeding these pancakes to my munchkin}

 

  • Banana:  Potassium, fiber, and high in Vitamins B6, B2 & C.  Bananas are great for muscle cramps, reduce swelling, lower blood pressure, protect against heart attack & stroke, mood enhancer thanks to tryptophan, and great for digestion.
  • Egg:  Contain all nine essential amino acids (protein), and they’re loaded with vitamins & nutrients that help your eyes, brain, and heart.
  • Pure Vanilla:  Antioxidants, B-complex, calcium, magnesium, potassium & zinc.  Anti-inflammatory properties, antidepressant, and sleep aid.
  • Cinnamon:  Vitamin K, iron, manganese, fiber, and calcium, as well as, has antibacterial and anti-inflammatory properties.
  • Nutmeg:  Fiber, manganese, sleep aid, indigestion & pain relief, helps with concentration, and improves blood circulation in the body.

Ingredients
  1. 1 banana, mashed
  2. 1 egg
  3. splash of vanilla extract
  4. dash of cinnamon & nutmeg
  5. Coconut oil or butter
  6. {optional add-ins or toppings} chocolate chips, coconut shaving, nuts, fresh or dried fruit, whipped cream.
Instructions
  1. 1. Mash a banana in a bowl.
  2. 2. Add the rest of the ingredients to the bowl and mix.
  3. 3. Heat coconut oil or butter over medium low heat in a skillet/griddle.
  4. 4. Once the oil or butter is melted, pour batter on skillet/griddle.
  5. 5. Flip once the side is a golden brown.
  6. 6. Once both sides are golden brown, serve on a plate with optional toppings or as is.
Notes
  1. Can easily double or triple this recipe.
